Wish I Were In South Beach Smoothie

Sure have had enough snow in my neck of the woods and looking for a bit of sunshine. Transport me to South Beach with this super tropical treat in a glass. Ahhh-rejuvenated!

Ingredients

  • ¼ cup toasted old-fashioned rolled oats*
  • 1 tablespoon soaked chia seeds (1 teaspoon dry, unsoaked)**
  • ¼ cup coconut water
  • 1 ripe mango, pitted, peeled, coarsely chopped
  • 1 (12 ounce) package silken tofu, drained
  • supremes (segments) of 1 fresh lime
  • 3 tablespoons agave nectar (I like agave in the raw)
  • 4 to 6 ice cubes
  • optional garnish: lime slice, toasted oats, diced mango

Instructions

  1. Combine all ingredients in a blender. Blend for 1 minute.
  2. Pour into glasses. Garnish as desired.

Notes

*To toast oats, cook in a dry nonstick skillet over medium-high heat on your stovetop, stirring occasionally, for 5 minutes or until they are golden brown. Cool oats before adding to recipes.
