This is my mother’s broccoli salad recipe. She makes it by taste and doesn’t measure the ingredients. It is a family favorite so my sisters and I had her make it. We took notes and estimate the measurements. We made it and after a few adjustments, were able to write out the recipe and share it with the rest of the family.

Ingredients

  • 8 slices bacon
  • 1/2 head broccoli, coarse chopped
  • 1/2 head cauliflower, coarse chopped
  • 1 cup mayonnaise
  • 2 Tablespoons rice vinegar
  • 1/3 cup sugar
  • 1/2 cup chopped red onion
  • 1/2 cup raisins
  • 1/2 cup purple seedless grapes, halved
  • 1/2 cup chopped pecans
  • 1 small carrot, shredded

Instructions

  1. Cook bacon in skillet over medium heat until crispy. Remove from the skillet to paper towels to blot grease. When cool enough to handle, crumble to bits.
  2. Put broccoli and cauliflower in colander. Rinse with hot water. Let drain.
  3. In pretty salad bowl, add mayonnaise, vinegar and sugar. Mix well. Then add onion, raisins, grapes, pecans, broccoli, cauliflower, bacon pieces, and carrots. Toss together and coat well with the mayonnaise dressing. Cover and put in refrigerator until ready to serve.

Notes

TIPS
• Cut bacon in pieces instead of cooking in strips.
• Use half mayonnaise and half salad dressing.
• White wine or cider vinegar can be used in place of rice vinegar.
• Diced unpeeled red apple can be substituted for grapes.
• Add diced celery, if desired.
