Happy St. Patrick’s Day CCC!
On a day where so many of us will be enjoying green beer, corned beef and maybe even a shamrock shake, I wanted to start off the morning with something a little healthier. This is a green recipe you can feel good about!
These easy zucchini pancakes can be enjoyed for breakfast, as a light lunch with a salad, or even as a side dish at dinner time.
The shredded zucchini adds a hint of green to these savory pancakes while dill is the perfect green garnish for the dollop of sour cream on top.
