Shrimp and Avocado Escabeche” from Jen Beckman!!!

The light and bright salad can be prepared in advance and served straight from the refrigerator.  Our friends at Core Home loved the combination of shrimp and avocado and said this salad is refreshing and perfect for summer.  Jen is now the proud new owner of some outstanding Core Home products as well as a $200 gift card.  Congratulations Jen!

How did you come up with your winning recipe?

I came up with this recipe when I was eating a shrimp taco, loaded with pickled vegetables.  The tortilla was getting in the way of all the pickles!  I switched the proportions, making shrimp more of a garnish, and found that it was a perfect make-ahead meal for the summer. 

Do you have any plans for the prize?

The Core Home products look very chic in the pictures, and I don’t have a salad bowl that I love. I look forward to serving many crunchy salads from it!  The money will probably fund a date night for my husband and I – he has that laborious task of tasting my inventions.

Do you have an award-winning tips or recipe contest advice?

My contest advice?  Hmmm.  I think it is important not to take it too seriously.  If you are stressing about it, take a break.  It really is supposed to be fun.  Wait for inspiration, rather than trying to slog through every contest, and you will find some winners.
