These “Italian Pesto Rolls” won CCC member Mary Louise Lever the $2000 first prize in the bread category of the 7th annual Quaker Oatmeal “Bake It Better With Oats” Recipe Contest.Italian appetizers

The recipe creatively incorporates oats into a cheesy yeast bread dough that is rolled into pesto-filled crescents.  I think the secret ingredient here is the clever addition of fennel seeds into dough.  It gives every bite that little extra “something” to make the recipe extraordinary!

I incorporated these pesto rolls into an elegant Italian appetizer spread.  They are excellent when served with thin slices of prosciutto, fresh vegetables, olives and Italian cheese.   Of course, how can we forget a glass of Prosecco!

    These continue my favorite rolls to make! Your creative use as an appetizer is perfect for entertaining. Like you, the judges also thought that the addition of the coarsely fennel seeds was a clever addition for the dough. I love to add a little surprise taste to my creations. Prosecco is my favorite to serve with appetizers too.
