Apricot Breakfast Galette

Galette is a baked french tart that is made with a pastry crust topped with fruit. I adapted the recipe to make a easy weekend breakfast with a few pantry ingredients . Almond flour and sliced almonds are easily available in the baking section of your supermarket. I usually store my almond flour in the refrigerator. Any type of Italian / French / Brioche / Challah bread can be used.
Ingredients
- 8 Bread slices , cut into 3/4 inch thick
- 2-3 Tablespoons Unsalted butter, room temperature
- 2 Eggs
- 1/2 teaspoon Vanilla extract
- 2 Tablespoons Sugar
- 1/2 cup + 2 Tablespoons Almond powder or almond meal
- 1 Tablespoon All-purpose flour
- 1/4 cup Bonne Maman Apricot Preserves
- Sliced almonds, for garnish
Instructions
- Preheat oven to 400 degrees F.
- Lightly brush butter on both sides of each bread slice and place a baking sheet.
- Mix eggs , vanilla extract , sugar , almond flour and all purpose flour together in a bowl.
- Spread 1 heaped tablespoon of the almond mixture on the top side of each bread slice.
- Spread half a tablespoon of Bonne Maman Apricot Preserves on top of the almond mixture and sprinkle few sliced almonds on top.
- Place in oven and bake for 15 - 20 minutes until golden and toasted. Serve hot.
