These banh mi burritos capture all the fresh bright flavors of the traditional sandwich with the added nutritional boost of the Mann’s Broccoli Cole Slaw. Perfect for a quick and delicious weeknight meal.

Ingredients

  • Pickled Broccoli Slaw:
  • 3 tablespoons rice vinegar
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon kosher salt
  • 2 cups Mann’s Broccoli Cole Slaw
  • Sriracha Mayo:
  • 1/4 cup mayonnaise (regular or reduced fat)
  • 1 tablespoon sriracha or other garlic chili sauce
  • Banh Mi Burritos
  • 4 (8-inch) flour tortillas
  • 12 ounces steak or chicken breast (boneless, skinless), grilled (or cooked) and cut into strips
  • 2 tablespoons hoisin sauce
  • 2/3 cup packed cilantro leaves
  • 1 to 2 red jalapenos, thinly sliced

Instructions

  1. For the Pickled Broccoli Cole Slaw: In medium bowl, combine vinegar, sugar and salt, whisking until sugar dissolves. Add Mann’s Broccoli Cole Slaw; toss to mix. Let stand 15 minutes.
  2. For the Sriracha Mayo: In small bowl, combine mayonnaise and sriracha.
  3. To assemble: Spread each tortilla on one side with 1 tablespoon of the sriracha mayonnaise. Divide the sliced steak or chicken among the tortillas and drizzle evenly with the hoisin. Top with equal amounts of the pickled broccoli slaw, cilantro and jalapeno. Roll each tortilla up into a burrito. To serve, cut in half on the diagonal.
