Beef Kiev Ole – Kansas State Finalist in the 1975 National Beef Cook-Off.

Ingredients

  • 2 pounds beef round steak, cut into 6 pieces and pounded thin
  • 1-1/2 cups cheddar cheese cracker crumbs
  • 1 Tablespoon taco seasoning mix
  • 3/4 cup melted butter or margarine
  • 1/2 pound cheddar cheese, cut into 6 narrow strips
  • 1/4 cup taco sauce
  • 2 to 3 cups shredded lettuce
  • 3/4 to 1 cup diced tomato
  • 6 whole ripe olives
  • Taco sauce, if desired

Instructions

  1. Combine cracker crumbs and taco seasoning mix. Dip each piece of steak in butter or margarine then in cheese crumbs. Place a strip of cheese on center of each steak and cover each strip with 2 teaspoons taco sauce. Roll each steak, tucking in ends to completely enclose cheese; fasten with wooden picks. Place rolls, seam side down, in a 12x8x2 inch shallow baking dish. Drizzle remaining butter or margarine over top of each roll.
  2. Bake in a 375 degree F. oven for 35-40 minutes or until tender. Remove picks and serve each roll on bed of shredded lettuce and diced tomato. Top each with a ripe olive and serve with taco sauce, if desired.
Yield: Makes 6 servings.
