This bean dip is full of unique flavors that work so well together. The blue cheese, mixed with the cream cheese, has a very subtle sharp flavor, that most people can’t detect as blue cheese. The sweet heat of the barbecue sauce contrasts with the creamy sharp cheese spread. Then there’s just a touch of salty smoky bacon on top. The Dill Triscuit crackers is the right finish for one more layer of flavor. This is a great way to use up leftover black rice from last nights supper!

Ingredients

  • 1 package (8 oz.) Neufchatel (1/3 less fat) cream cheese
  • 1 package (4 oz.) crumbled reduced fat blue cheese (divided)
  • 1 cup prepared black rice
  • 1 cup black beans, drained, rinsed
  • ½ cup Hot and Spicy Barbecue Sauce
  • 3 slices bacon, cooked crisp, crumbled
  • Green tops of 2 green onions chopped fine
  • Dill flavored Triscuit crackers

Instructions

  1. Combine cream cheese and about ¾ of the blue cheese in a small bowl. Spread evenly over a serving platter. Spread prepared black rice over cream cheese mixture. Combine barbecue sauce and black beans. Spread over rice. Top with crumbled blue cheese and chopped green onions. Serve with Dill flavored Triscuit crackers.

Notes

Note: The prep time does not include preparing the black rice. Prepare rice according to package.
