Crema Panna Cotta with Seasonal Fruit and Lime
You will love this perfect panna cotta. Feel free to use your favorite, seasonal fruit to make this dessert a year-round favorite!
Ingredients
- Panna Cotta
- 1-1/2 cups heavy cream
- 1-1/2 cups whole milk
- 1/2 cup sugar
- 1 vanilla bean, split lenghtwise
- 1 pinch salt
- 1 cup crema
- 1 Tablespoon unflavored gelatin powder
- Seasonal Fruit
- 8 oz. seasonal fruit, diced
- 1 lime, juiced and zested
- 1 Tablespoon sugar
- Garnish
- Fresh mint leaves
Instructions
- For the Panna Cotta: Pour the cream, milk, sugar, vanilla bean and salt into a saucepan and bring to a simmer over high heat. Remove from heat and whisk in the crema. Scrape the vanilla bean to remove remaining seeds. Pour the cream mixture through a strainer and add the gelatin to the hot mixture, stirring until it has dissolved. Pour evenly into 6 molds or 3/4 cup ramekins and chill to set for at least 3-4 hours.
- For the Fruit: Mix seasonal fruits with lime juice and sugar. Let stand for 10-15 minutes to allow the fruit to release its natural juices.
- Unmold the panna cotta into 6 small plates and top with the prepared fruit. Garnish with the reserved lime zest and fresh mint leaves
