Kiev-Style Catfish Recipe

This “Kiev-Style Catfish Recipe” was the $500 1st place winner in the 1979 National Farm-Raised Catfish Cooking Contest.

Ingredients

  • 2 pounds skinned farm-raised catfish fillets, fresh or frozen
  • 1 teaspoon onion salt
  • 1 (3 oz.) package cream cheese with chives
  • 2 Tablespoons margarine or butter
  • 1 teaspoon lemon pepper seasoning
  • 1 (4 oz.) can mushroom stems and pieces, drained and chopped
  • 1/2 cup melted margarine or butter
  • 1-1/3 cups seasoned crouton crumbs
  • Parsley sprigs, for garnish

Instructions

  1. Thaw fish if frozen. Divide fillets into 12 strips about 6x2 inches. press slightly to flatten fish; sprinkle with onion salt. In a medium bowl combine cream cheese, 2 Tablespoons butter and lemon pepper seasoning. Stir in mushrooms. Divide cheese mixture into 12 portions. Place a portion of cheese mixture at one end of each strip of fish. Roll fish around cheese and secure with a toothpick. Dip rolls into melted butter and roll in crumbs. Place rolls in a well-greased baking dish, 13x9x2 inches. Drizzle with remaining butter. Bake, uncovered, in a 350 degree F. oven for 25 to 30 minutes or until fish flakes easily when tested with a fork and crumbs are golden brown. Remove toothpicks. Garnish with parsley.
Yield: Serves 6.
