Mediterranean Angel Hair Pasta
This is one of my family’s favorite pasta creations. The flavors are just fabulous together. Great for company as well and very easy to make!
Ingredients
- 2 tbs. olive oil
- 1 large clove of garlic, thinly sliced
- 3 scallions, sliced
- 4 large Cremini mushrooms, stems sliced
- 1 28 oz. can diced tomatoes (or 2 cups roma tomatoes, diced)
- ½ c. roasted red pepper strips
- ¼ tsp. crushed red pepper flakes
- ½ c. Kalamata olives quartered
- ½ c. Feta cheese, crumbled
- 2 tbs. fresh basil, chiffonade (thinly sliced)
- 12 oz. angel hair pasta, cooked according to package directions (1 c. pasta water reserved)
Instructions
- Heat olive oil in large 12” skillet on medium heat. Add garlic, scallions and mushrooms. Saute 5 minutes, stirring frequently. Add diced tomatoes and cook 10 minutes. Add roasted pepper strips, crushed red pepper and olives. Cook 5 minutes. Stir in cheese, basil and ½ c. pasta water (more if needed to desired consistency). Plate pasta and pour over sauce and serve.
Notes
Salad and crusty bread make this a great meal.
You can also add shrimp and scallops or chicken.
