These tasty low fat tostada cups are great for the family and a real hit at parties.

Ingredients

  • 3 to 4 ounces cooked and finely shredded skinless chicken breast
  • 1/2 teaspoon chili powder
  • 2 tablespoons diced green chiles
  • 12 wonton wrappers
  • 1/2 cup fat free refried beans
  • 1 teaspoon red hot sauce
  • 1/2 cup finely shredded mozzarella cheese, low moisture part-skim
  • 2 tablespoon chopped cilantro
  • 1/4 cup salsa
  • 1/4 cup low fat sour cream

Instructions

  1. Preheat oven 350 degrees F. Spray mini muffin pan with non-stick cooking spray.
  2. In a small bowl combine chicken, chili powder and green chiles until mixed. Set aside.
  3. Press 1 wonton wrapper into each muffin cup.
  4. Lightly spray edges of each wrapper with non-stick cooking spray.
  5. In a small bowl mix refried beans and hot sauce.
  6. Layer each wrapper with 1 teaspoons of beans, 1/2 teaspoon of cheese, 2 teaspoons of the chicken mixture and top with 1 teaspoon of cheese.
  7. Bake 6-8 min. or until edges are golden and cheese is melted.
  8. Arrange on serving plate. Top each wrapper with cilantro and 1/2 teaspoon of salsa. Place sour cream in small container on side.

Notes

I have used ground turkey instead of chicken and less or more chili powder and hot sauce to control the heat.
This recipe is easy to double or triple for a party.
