Mini Chicken Tostada Cups
These tasty low fat tostada cups are great for the family and a real hit at parties.
Ingredients
- 3 to 4 ounces cooked and finely shredded skinless chicken breast
- 1/2 teaspoon chili powder
- 2 tablespoons diced green chiles
- 12 wonton wrappers
- 1/2 cup fat free refried beans
- 1 teaspoon red hot sauce
- 1/2 cup finely shredded mozzarella cheese, low moisture part-skim
- 2 tablespoon chopped cilantro
- 1/4 cup salsa
- 1/4 cup low fat sour cream
Instructions
- Preheat oven 350 degrees F. Spray mini muffin pan with non-stick cooking spray.
- In a small bowl combine chicken, chili powder and green chiles until mixed. Set aside.
- Press 1 wonton wrapper into each muffin cup.
- Lightly spray edges of each wrapper with non-stick cooking spray.
- In a small bowl mix refried beans and hot sauce.
- Layer each wrapper with 1 teaspoons of beans, 1/2 teaspoon of cheese, 2 teaspoons of the chicken mixture and top with 1 teaspoon of cheese.
- Bake 6-8 min. or until edges are golden and cheese is melted.
- Arrange on serving plate. Top each wrapper with cilantro and 1/2 teaspoon of salsa. Place sour cream in small container on side.
Notes
I have used ground turkey instead of chicken and less or more chili powder and hot sauce to control the heat.
