Monterey Jack and Green Chili Cocktail Palmiers

The ideal accompaniment for a holiday brunch or evening cocktail party.

This appetizer can be made in advance with little to no prep involved and baked in batches for a sweet spicy appetizer in which to serve to your guests.

Ingredients

  • Monterey Jack and Green Chili Cocktail Palmiers
  • 1 1/2 Tablespoons Chili powder
  • 1 1/2 Tablespoons Brown sugar
  • 3/4 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper, ground
  • 2 Eggs, lightly beaten
  • 2 Tablespoons Fresh tarragon, chopped
  • 1/2 cup Flat leaf parsley, chopped
  • 3/4 cup Cheddar cheese, shredded
  • 3/4 cup Monterey pepper jack cheese, shredded
  • 1/4 cup Canned green chilies, drained well
  • 4 sheets Prepared puff pastry

Instructions

  1. In a mixing bowl combine the spices, brown sugar, herbs and cheeses.
  2. On a lightly floured work surface unroll a sheet of puff pastry. Using a pastry brush lightly coat the surface with egg wash.
  3. Evenly arrange a quarter of the cheese mixture over the surface of the puff pastry sheet, sprinkle 1 Tablespoon of green chilies on top.
  4. Roll 1 edge of the pastry sheet to the middle of the strip. Repeat with the opposite side meeting the original roll in the middle. Place the roll in the refrigerator to rest for 30 minutes. Repeat the technique with the remaining sheets of puff pastry.
  5. Using a serrated edge knife cut the rolls into 1/2 inch thick slices. Arrange onto a parchment lined baking tray which has been sprayed with nonstick vegetable cooking oil.
  6. Lightly brush the outside of each palmier with additional egg wash and sprinkle the top with a small quantity of the brown sugar mixture.
  7. Bake in a 350 degree oven for approximately 15-18 minutes or until fully baked, and the outside is golden brown. Serve on a decorative cocktail platter.
