Roasty Toasty Blueberry-Banana Power Smoothie

Packed with ingredients that will boost anyone’s immune system, this delicious, healthy smoothy is the perfect morning boost.
Ingredients
- ½ cup quick cooking oatmeal
- ¼ cup walnuts (coarsely chopped)
- 2 cup coconut milk beverage*
- 1 cup plain non-fat Greek yogurt
- 2 cups cut-up banana
- 1 cup blueberries
- 2 Tbsp chia seeds
- 1 ½ Tbsp honey
- 1 cup ice cubes (or to taste)
Instructions
- Place oatmeal and walnuts in a small pan and continually stir on medium high till slightly toasted. (You will smell the delicious toasty aroma when it’s done.) This process will take about 3 minutes. (Alternately, the oatmeal and walnuts could be toasted in the oven. Place in a shallow baking pan and toast in a 350 oven for 5-8 minutes, stirring once.)
- Place all ingredients into a blender and blend till smooth. Serve immediately. Enjoy!
Notes
*For the purpose of this smoothie, I suggest using the Coconut Milk Beverage that can be found near the alternative milk products in the dairy case.

Is the 1 cup of ice for more volume for 4 servings? I use frozen unsweetened blueberries so you don’t need to add extra ice.
