Roasty Toasty Blueberry-Banana Power Smoothie

Packed with ingredients that will boost anyone’s immune system, this delicious, healthy smoothy is the perfect morning boost.

Ingredients

  • ½ cup quick cooking oatmeal
  • ¼ cup walnuts (coarsely chopped)
  • 2 cup coconut milk beverage*
  • 1 cup plain non-fat Greek yogurt
  • 2 cups cut-up banana
  • 1 cup blueberries
  • 2 Tbsp chia seeds
  • 1 ½ Tbsp honey
  • 1 cup ice cubes (or to taste)

Instructions

  1. Place oatmeal and walnuts in a small pan and continually stir on medium high till slightly toasted. (You will smell the delicious toasty aroma when it’s done.) This process will take about 3 minutes. (Alternately, the oatmeal and walnuts could be toasted in the oven. Place in a shallow baking pan and toast in a 350 oven for 5-8 minutes, stirring once.)
  2. Place all ingredients into a blender and blend till smooth. Serve immediately. Enjoy!

Notes

*For the purpose of this smoothie, I suggest using the Coconut Milk Beverage that can be found near the alternative milk products in the dairy case.

      Sorry, we don’t have nutrition information on these recipes. However, I believe there are several online resources you can use to input ingredients and they will calculate it for you. Hope that helps!

    The caloric breakdown for each serving is 305 calories, 11.1 fat, protein 11.1, carbs 42.3 IF you use unsweetened coconut milk like Silk.
    Is the 1 cup of ice for more volume for 4 servings? I use frozen unsweetened blueberries so you don’t need to add extra ice.
