This recipe could not be easier and makes a perfect appetizer or light snack for a lazy summer’s day. The combination of crunchy sweet peppers, smoked salmon and creamy goat cheese is heavenly. The sweet pomegranate arils add an unexpected burst of juiciness while the pink pepper berries take the combination to a new level.

Ingredients

  • 8 sweet mini peppers
  • 3 oz smoked salmon
  • 4 oz creamy goat cheese
  • 1/4 cup pomegranate arils
  • 2 tablespoons pink pepper berries

Instructions

  1. Cut peppers in half, lengthwise. Spoon approx. 1 teaspoon of goat cheese into each pepper half and press down firmly to fill cavity. Cut salmon into small strips. Place a strip on each pepper half. Top with pomegranate arils and pink pepper berries. Refrigerate until ready to serve.
