South Seas Smoked Salmon Samplers
Omega-rich smoked salmon snack spread served on cucumber rounds instead of crackers makes for a healthy low calorie snack.
Ingredients
- 4 ounces smoked salmon, preferably wild caught
- 2 tablespoons rough chopped cilantro
- 2 tablespoons reduced fat olive oil mayonnaise
- 1 tablespoon fresh lime juice
- 2 teaspoons Dijon mustard
- 1/2 teaspoon wasabi paste
- 2 small green onions, trimmed and cut into 1 inch crosswise pieces
- 2 medium radishes, trimmed and halved
- 1 medium English cucumber, ends trimmed off then sliced into 1/3 inch rounds
- 1 tablespoon sesame seeds, toasted *
- 1 tablespoon fresh snipped chives
Instructions
- Place the first 8 ingredients (through radishes) in food processor, pulse mixture until smooth, scraping down sides with spatula if needed. Top each cucumber round with a scant teaspoon of the smoked salmon mixture, sprinkle with sesame seeds and chives. Place cucumber rounds onto a decorative platter and serve.
Notes
*NOTE to toast sesame seeds place in a small skillet over medium heat, shake skillet often until sesame seeds are golden about 3 minutes.
