Omega-rich smoked salmon snack spread served on cucumber rounds instead of crackers makes for a healthy low calorie snack.

Ingredients

  • 4 ounces smoked salmon, preferably wild caught
  • 2 tablespoons rough chopped cilantro
  • 2 tablespoons reduced fat olive oil mayonnaise
  • 1 tablespoon fresh lime juice
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon wasabi paste
  • 2 small green onions, trimmed and cut into 1 inch crosswise pieces
  • 2 medium radishes, trimmed and halved
  • 1 medium English cucumber, ends trimmed off then sliced into 1/3 inch rounds
  • 1 tablespoon sesame seeds, toasted *
  • 1 tablespoon fresh snipped chives

Instructions

  1. Place the first 8 ingredients (through radishes) in food processor, pulse mixture until smooth, scraping down sides with spatula if needed. Top each cucumber round with a scant teaspoon of the smoked salmon mixture, sprinkle with sesame seeds and chives. Place cucumber rounds onto a decorative platter and serve.

Notes

*NOTE to toast sesame seeds place in a small skillet over medium heat, shake skillet often until sesame seeds are golden about 3 minutes.
