Spinach, Pineapple and Banana Bars
I am a baker and I love to eat baking! This is a problem all year ’round, but especially after the holidays. To ease the pain of ‘holiday withdrawal’, I created these bars. I still get a healthy, low fat and low sugar snack, but don’t have to endure serious chocolate withdrawal.
Ingredients
- 3/4 cups all purpose flour
- 3/4 cups whole wheat flour
- 1/3 cup wheat germ
- 2 Tblsp chia seeds
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 2 Tblsp brown sugar
- 3 ripe, mashed bananas
- 2 eggs, slightly beaten
- 1/3 cup vanilla yogurt (or subsitute 1/2 cup vanilla greek yogurt)
- 1 can Crushed Pineapple (14 fl oz / pineapple, drained and liquid squeezed out)
- 1½ cup washed, dried and finely chopped fresh baby spinach
- 3/4 cup milk chocolate chips
- Optional: ½ cup chopped pecans or walnuts (optional) *** I don’t use as I like to be able to send my kids to school with them
Instructions
- Preheat oven to 350* F and spray 13x9 inch baking pan with non-stick cooking spray
- In a large bowl combine flours, wheat germ, chia seeds, baking powder, cinnamon brown sugar and baking soda.
- In another large bowl, beat mashed bananas, eggs and vanilla yogurt, then add pineapple
- Add dry ingredient to wet ingredients and stir just until combined. Then add in chopped spinach and chocolate chips.
- Spread batter into prepared pan. Bake in preheated oven for about 25 – 30 minutes or until a cake tester or wooden toothpick comes out clean (I usually bake until 20 and then test it from there).
- Cool in pan and then cut into bars.
Notes
You can cut them into smaller bars and get 24 in total
