Juicy cherry tomatoes are stuffed with a creamy blend of mukimame and goat cheese. They are such a fun, colorful appetizer and are a delicious, healthy option to serve at your next party!

Ingredients

  • 20 ripe cherry tomatoes
  • 1 and 1/2 cups steamed mukimame (shelled soybeans)
  • 1/4 cup goat cheese
  • 1 and 1/2 tbsp lemon juice
  • 1/4 cup fresh Italian parsley
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 3 tbsp extra virgin olive oil
  • 2 tbsp crushed red pepper, for garnish

Instructions

  1. Slice the tops off of each cherry tomato. Using a melon baller, carefully scoop out the insides of each tomato.
  2. In a food processor, combine mukimame, goat cheese, lemon juice, parsley, sea salt, black pepper and olive oil. Blend until almost smooth. Taste and add a little more salt if desired.
  3. Using a teaspoon, fill each hollowed out tomato with mukimame-goat cheese blend. Sprinkle with crushed red pepper.

Notes

Mukimame or Edamame (still in their pods) are usually sold frozen. Steam according to package directions and shell if necessary.
