It is summertime, and living is easy. So whether you lying on the beach or in a lounge chair in friend’s backyard, ignore the sand or your responsibilities for the moment. Kick back and enjoy a cool, refreshing cocktail full of citrus flavors, with a hint of honey and vanilla.

Ingredients

  • 1 ounce chilled citrus-flavored vodka (or for non-alcoholic, lemonade)
  • 1 tablespoon wildflower honey (or 1/2 ounce Simple Syrupr)
  • 3 tablespoons freshly squeezed orange juice
  • 3 tablespoons freshly squeezed Meyer lemon juice
  • ½ vanilla bean
  • Ice cubes
  • 1/3-2/3 cup chilled Ginger Ale soda (or other citrus-flavored soda)
  • Meyer lemon slice for garnish
  • 1 strawberry for garnish

Instructions

  1. Fill cocktail shaker with vodka, honey, orange juice, lemon juice, and vanilla bean. Let sit 10 minutes.
  2. Add enough ice cubes to come up 2/3 of the cocktail shaker. Shake well.
  3. Strain into cocktail glass. Top glass with soda. Stir a few times.
  4. Add a slice of lemon and strawberry for garnish. Drink lazily watching the waves come and go!

Notes

If you wish to use simple syrup instead of honey in this recipe, simply add 1/2 cup water and 1/2 cup sugar to a small saucepan set over medium-high heat. Stir occasionally and bring to a boil. Lower heat and gently boil for 5 minutes. Remove from heat. Cool in pay. Store in airtight container in refrigerator. Makes 3/4 cup syrup. Save balance for another occasion.
