Sweet and Spicy Green Salad with Walnuts
Speed up your metabolism with the best salad ever!!! Frozen blueberries red onions, and cherry tomatoes with mixed greens tossed with balsamic vinegar and caramelized maple syrup walnuts with a hint of cayenne pepper, sea salt, and black peppercorns… This is a salad you will make over and over again!!! Ingredients
- Salad
- 5 cups mixed greens
- 1/2 cup frozen blueberries
- 1/4 sliced red onion
- 1/2 cherry tomatoes cut in half
- 1/4 cup feta or goat cheese (YUM!)
- 1/4 cup balsamic vinegar
- Dressing
- 1/2 cup pure maple syrup
- 1/4 teaspoon sea salt
- 1/4 teaspoon grounded peppercorns
- 1/4 teaspoon powdered cayenne pepper
- 1/2 cup walnuts
Instructions
- In a large pour, combine lettuce, frozen blueberries, onions, tomatoes, and feta/goat cheese.
- Over medium heat, pour maple syrup in pan and cook until it starts bubbling. Add salt, pepper, cayenne pepper, and walnuts and stir well. When it has thickened (it won't take long), turn off heat and pour nuts over salad and blend well.
