The iconic BLT becomes an elegant appetizer by replacing the boring white toast with nutritious, crunchy sweet potato cakes. No mayo, thank you

Ingredients

  • 8 slices Applewood Smoked Bacon
  • 2 medium sweet potatoes - peeled, shredded
  • 1 small ginger root - peeled, grated
  • 1 Tablespoon flour
  • 1 egg
  • 2 Tablespoons olive oil, divided use
  • Sea salt and fresh pepper to taste
  • 8 small lettuce leaves
  • 8 tomato slices

Instructions

  1. Grill bacon on flat griddle or cast iron skillet over medium heat, remove to paper towel, save in warm place until ready to use, wipe griddle, keep hot.
  2. Combine sweet potatoes, ginger, flour, egg, 1 Tablespoon olive oil, salt and pepper in medium bowl, mix well until well blended. Brush griddle with remaining 1 Tablespoon olive oil, drop sweet potato mix by the tablespoonful on hot griddle, flatten with spatula, cook 3-4 minutes per side, turn off heat.
  3. Assemble BLT's: sweet potato, lettuce, tomato, bacon, sweet potato. Serve warm.
