Thumbprint Breakfast Cookies

Cookies for breakfast?? Both my kids do not have a problem waking up early on school days when I say “Cookies for breakfast”. The inspiration for these are from the classic PB & J sandwiches and thumbprint cookies. Feel free to replace the almond butter with your favorite nut butter.
Ingredients
- 1 cup Almond butter
- 1/2 cup Oats
- 1/2 cup All-purpose flour
- 2 Eggs
- 1/2 cup Sugar
- 3-4 Tablespoons Bonne Maman Strawberry Preserves
Instructions
- Preheat oven to 350 degrees F.
- Line a large baking sheet with parchment paper.
- Stir together almond butter , oats , all purpose flour , eggs and sugar in a bowl.
- Shape the dough into 1- 1 1/2 inch round balls and place on the baking sheet spacing about an inch apart.
- Flatten each ball lightly and make a indentation in the center of each cookie with your thumb and fill with about 1/2 teaspoon of BONNE MAMAN STRAWBERRY PRESERVES.
- Bake for about 18-20 minutes or until the cookies are set.
- Remove from oven and cool completely on a wire rack.
