This is an eye and taste bud-pleasing, decadent, yet healthy, recipe for breakfast or brunch, incorporating some of our favorite morning foods: yogurt, jam, berries and crepes. It is sure to be a show stopping crowd-pleaser and/or a healthy morning indulgence. for your immediate family.

Ingredients

  • Crepe Batter
  • 1 ½ cups all-purpose flour
  • ½ baking powder
  • ½ teaspoon salt
  • 2 large eggs, room temperature
  • 2 cups 2% or whole milk, room temperature
  • 2 tablespoons melted unsalted butter, cooled
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon canola or vegetable oil for pan
  • Yogurt Mixture
  • 1 pint plain Greek yogurt, drained
  • 2 tablespoons fresh lemon zest
  • 3 tablespoons honey
  • 1 ½ teaspoon pure vanilla extract
  • Toppings
  • 1/3 cup Bonne Maman Peach Preserves
  • 2 cups fresh blueberries
  • 1/3 cup Bonne Maman Four Fruits Preserves
  • 2 cups fresh raspberries, plus more for garnish

Instructions

  1. Make Crepe Batter: In a medium bowl, whisk together flour, baking powder, salt and sugar.
  2. Using a blender, mix remaining batter ingredients until well blended. Add in dry ingredients, pulse until batter is smooth. Let rest 10 minutes.
  3. Over medium heat, heat a nonstick 8 - inch crepe or skillet, brushed with 1 teaspoon oil. Pour about ¼ cup of Crepe Batter into center of skillet, immediately rotate skillet until batter covers entire bottom of skillet. Cook until golden, flip over and cook on other side. Transfer to separate plate. Cover to keep warm Repeat process until entire batter is used.
  4. Prepare Yogurt Mixture: In a medium bowl, whisk together drained yogurt, lemon zest, honey, and vanilla extract. Set aside.
  5. To Assemble: Using a 4-inch wide cookie cutter, or 4 x 4 inch mold, cut out rounds from the crepes (about 3 per crepe).
  6. Working with one cakelet at a time, arrange in following order: place 1 mini-crepe round in bottom of oil sprayed mold. Top with 1 rounded teaspoon of Bonne Maman Peach Preserves. Top with second crepe round. Spread 1 tablespoon yogurt mixture over crepe. Top with fresh blueberries. Place third crepe round, press down gently. Spread a rounded teaspoon of Bonne Maman Four Fruits Preserves. Top with fresh raspberries. Place another crepe round. Top with tablespoon yogurt mixture. Transfer to individual serving plate. Garnish with fresh berries. Repeat process for remaining individual servings.

Notes

Alternative Presentation: Instead of individual cakelets, make 1 large crepe cake. Simply avoid pre-cutting crepes into small rounds. Layer whole crepes, using the same toppings and order as provided above. To serve, cut cake into 8 wedges.
